After trying, unsuccessfully, to find a local poultry processor, I just wanted to let any newbies know (from a newbie) that roosters can be harvested at home without any big expense. I spent several hours on YouTube watching videos of how other people did it and finally decided on the "respectful chicken harvest" video method. I used a dollar store flannel backed plastic tablecloth as my apron, held him between my legs and slit his throat (make sure your knife is really, really sharp). Then I swished him in hot water, hung him by the feet from the clothesline and de-feathered him. Following the videos again, I was able to disembowel him without nicking his intestinal tract. Then cut him up just like you would a whole chicken from the store. Again, it wasn't easy emotionally or physically (for a 52 yo), but it was done and after 8 hours in the crockpot he was delish.

Glad you made it through it. The main thing is not to do too many at a time. We processed 10 cornish cross in one day. After about the sixth one, it was beginning to get to us.

I use a pair of scissors. I cut their heads off and let them bleed out in a bucket that I put the scraps in then cut the wings and legs just above the knee then pull the skin off. I cut down each side of the spine. Then ut a finger in where the top (neck) is and work my finger in between the breast and guts and pull down. It pulls the guts right out. i cut where the skin is attached at the hips and below the breast to detach it. Wash it off and put it in the bowl or pan. What ever i'm using to put the procesed quail in. I usually have ice water in it with a lit to keep flies out. Less than 5 minutes and it's done.
I found the video on youtube that shows this method. I just couldn't pull it's head off. But thats me.
